Lemon Rice






Preparation Time : 20 mins ( Cooking time for Rice )
Cooking Time : 7 mins

Ingredients:

Rice - 1 cup
Onion - 1/2 cup , chopped finely
Green Chillies - 2-3 , chopped
Lemon - 1/2
Turmeric - 1/2 tsp
Channa Dal - 1 tsp
Mustard seeds - 1 tsp
Garlic Pods - 7-8 ( the more the better )
Curry Leaves - 1 sprig
Cashewnut (optional)
Oil
Salt


Procedure:
  1. Cook the rice and cool it so the grains are separate.
  2. Heat oil in a kadai and fry the garlic pods as a whole , to golden brown. 
  3. Remove the pods & keep it separate.
  4. In the remaining hot oil, add mustard seeds, channa dal and curry leaves.
  5. Saute the chopped onion and green chillies.
  6. Add a pinch of asafoetida, turmeric powder and adjust salt as required.
  7. Put in the fried garlic pods and mix.
  8. Keep the heat in sim or lowest heat and add the lemon juice. 
  9. To this, add the cooked rice and mix well. 
  10. Adding fried cashews at this stage is optional. & ... we are done !! 
Tastes like heaven when served with Potato Poriyal :)
